Crayfish Or Lobster Thermidor Recipe

Ingredients
- 1 x crayfish, cooked
- 20 gm butter
- 1/4 c. white wine
- 200 ml mornay (cheese) sauce
- 1 tsp mustard, french
- 1/2 c. cream
- 1/10 tsp cayenne pepper
- 1 x egg yolks
- 1/2 c. cheese, grated
Directions
- Cut the lobster in half lenghtwise, reserving the shells for presentation. Remove the flesh and cut into 2cm X 2cm cubes.
- Heat the butter in a frying pan, saute/fry the lobster lightly to heat through. Moisten with white wine, add in the mornay sauce, mustard, cream and pepper and bring to a simmer. Remove the pan from the heat and stir in the egg yolk.
- Carefully spoon the lobster and sauce back into the shells, sprinkle with grated cheese and cook under the griller till cheese is melted and golden.
