Directions

  1. Cut artichoke stem and top third of leaves and throw away. Boil for 25-40 minutes. in salted water with a teaspoon of lemon juice. It's done when an outer leaf pulls out easily.
  2. Drain well upside down. When cold sufficient to handle, press leaves back gently and scrape out choke with a spoon. Chill.
  3. Mix rest of ingredients and place on artichoke.
