Sausage/Egg Brunch Casserole Recipe

Ingredients

  • 10 x Large eggs
  • 16 ounce cottage cheese, lowfat
  • 1 lb Monterey jack cheese grated
  • 8 ounce green chiles -- diced
  • 1/2 c. flour
  • 1 tsp baking pwdr
  • 1/2 tsp salt
  • 1/2 c. butter -- melted
  • 3/4 lb pork sausage -- grnd
  • 1/2 lb mushrooms -- sliced
  • 4 x green onions -- sliced

Directions

  1. The night before:Brown and drain sausage. Saute/fry onions and mushrooms in 1 TBS butter.
  2. Beat Large eggs till lemon colored. Fold in cheeses. Add in chiles, sausage, mushrooms and onions. Stir, cover and chill overnight.
  3. The next morning:Stir in sifted flour, salt, baking pwdr, and the rest of the melted butter.
  4. Spray 9 x 13 glass pan with cooking spray. Fill with egg mix.
  5. Bake at 350 for 40 to 45 min or possibly till browned. Let stand for 10 min.
