Directions

  1. Heat extra virgin olive oil in heavy large pot over medium-high heat. Add in grnd pork and grnd beef and saute/fry till brown, about 3 min. Add in cubed beef and garlic and saute/fry 5 min. Add in 2 c. water; bring to boil. Add in cumin, chili pwdr, oregano, salt, and cayenne pepper.
  2. Reduce heat, cover, and simmer 10 min. Add in tomato paste and sugar and simmer 5 min. Add in tomatoes, onions, and peppers and simmer till vegetables are tender, about 30 min.
  3. Add in black beans and cilantro to chili. Add in beef broth 3/4 c. at a time, till thinned to desired consistency. (Can be prepared 1 day ahead. Chill uncovered till cool, then cover and keep refrigerated.) Bring chili to simmer. Ladle warm chili into bowls; top with grated cheddar cheese and serve.
