Directions

  1. Preheat oven to 3350 . In large bowl, combine oats, honey, sesame seeds, zest, vanilla, cinnamon and salt. Coat baking pan with nonstick cooking spray. Proportionately spread oat mix in pan. Bake, stirring frequently, till granola is almost dry and lightly toasted, 12 to 15 min. Add in almonds for the last 5 min of baking. Remove from oven. Cold completely, about 30 min. Stir in apricots and raisins. Place in airtight container. Will stay fresh up to 1 week.
  2. Yield: 2 c.

    This recipe can be modified because it contains a large amount of salt!! It seems that you could just add a dash of salt rather than the 1/4 teaspoon of salt.

    The serving size could also be reduced to a serving size of a couple of tablespoons, therefore reducing the amount of carbohydrates eaten.

    I also recommend adding a couple of tablespoons of flax seeds to improve the nutritional value and reducing the amount of almond slivers to 1/4 cup to reduce that amount of fat in the recipe.
