Lemon Pepper Chicken Breasts Recipe

  • 2 x Lemons, ends removed
  • 6 x Boneless skinless chicken breast halves
  • 2 Tbsp. Lemon pepper
  • 1/2 tsp Salt
  • 2 Tbsp. Sugar
  • 2 tsp Chili pwdr

Directions

  1. Lightly brush grill with vegetable oil. Then prepare the grill with medium-warm coals, or possibly heat a gas grill. Slice each lemon into 6 thin rounds.
  2. Pick out seeds and throw away. Arrange the slices in a single layer on a microwave-safe plate. Cover the plate and microwave the slices at full power for 1 minute. Set the slices aside to cold.
  3. Place chicken between sheets of plastic wrap. Lb. with meat pounder or possibly bottom of heavy skillet to even thickness. Season with lemon pepper and salt.
  4. Grill chicken breasts till hard and browned, about 4 min per side; an instant-read thermometer inserted in thickest part of breasts should register 160 . Remvoe to platter and keep hot.
  5. Sprinkle lemon slices with sugar and chili pwdr. Grill till browned on both sides, for about 40 seconds per side. Place 2 lemon slices on each chicken breast to garnish, and drizzle with any juice remaining in microwave dish.
