Healthy Apple Walnut Muffins Recipe

Here's a healthy & simple recipe that makes a very delicious muffin. Made with no added fat or sugar, these tasty muffins use fruit and buttermilk to keep them moist.

When baking these, I get a lovely golden top with a beautiful indentation from the apple slice inserted in the top of the muffin and make for a nice presentation. Serve this warm with your choice of apricot jam, apple jam or apple butter on the side.

Directions

  1. Preheat oven to 375°F. Grease 12 standard size muffin-pan cups or line with paper liners.
  2. Place diced apples in a small bowl, steam briefly in microwave for approximately 3 minutes; cool completely. Repeat for apples wedges using a separate bowl.
  3. Mix together flour, baking soda, cinnamon, ginger, allspice, nutmeg and salt. Mix together flour, baking soda, cinnamon, ginger, allspice, nutmeg and salt.
  4. Stir flour mixture and oat bran into egg mixture until dry ingredients are just moistened. Do not over mix. Gently stir in chopped apples and nuts.
  5. Spoon batter into prepared pan, filling cups two-thirds full. Garnish each muffin with an apple wedge, thin edge down.
  6. Bake muffins until lightly golden and tops spring back when pressed, 25 minutes. Transfer pan to a wire rack to cool slightly. Turn muffins out onto rack to cool slightly to serve warm or cool completely.
  7. Tip #1: Instead of frozen apple juice concentrate, use other bottled fruit juice concentrates. Health food stores generally carry the best variety. Experiment with such interesting flavors as papaya, pineapple and mango for a tropical taste.
  8. Tip #2: Equal parts of plan/vanilla non-fat Greek yogurt can be substituted for the buttermilk.
