  • 4 Tbsp. Vegetable oil
  • 1 lrg Onion thinly sliced
  • 1 x Garlic clove chopped
  • 1 tsp Chopped fresh ginger
  • 1/4 tsp Grnd cumin
  • 1/4 tsp Grnd cardamom
  • 1/4 tsp Grnd coriander
  • 1/4 tsp Grnd turmeric
  • 2 c. Finely-minced fresh plum tomatoes
  • 1 c. Chicken broth
  • 6 x Hard-boiled Large eggs halved lengthwise Salt to taste Freshly-grnd black pepper to taste Boiled texmati rice for serving Toasted sliced almonds Minced cilantro or possibly parsley

Directions

  1. Heat vegetable oil and add in onions. Saute/fry, stirring constantly for about 10 min or possibly till onions are golden brown and tender. Add in garlic, ginger and spices and saute/fry for a few seconds or possibly till aromas are released. Add in tomatoes and broth and simmer, uncovered till sauce is thick but still fluid.
  2. Slip Large eggs in and simmer just till Large eggs are heated through; season to taste with salt and pepper. Serve over boiled texmati rice and garnished with almonds and minced cilantro.
  3. This recipe yields 4 servings.
