- 2 c. zucchini, grated and pressed dry
- 2 green onions, thinly sliced
- 1 grated carrots
- 2 tomatoes, peeled, seeded and minced
- 1/2 c. mozzarella cheese
- 1/4 c. Parmesan cheese
- Pizza sauce
- English muffins
Directions
- Mix first 6 ingredients, spread on English muffin (pretty hefty amount) add in pizza sauce, grill under broiler.
