  • 9 pounds onions, red, jullienned
  • 60 pounds tomatoes, large dice
  • 1/4 cup salt
  • 1/2 teaspoon pepper
  • 4 pounds sugar
  • 1.5 gal vinegar, white
  • 8 cups H2O

Directions

  1. Combine cucumbers, onions and tomatoes.
  2. Combine salt, pepper, sugar, vinegar, and water; blend well.
  3. Pour over cucumbers and onions.
  4. Cover and refrigerate for at least 1-1/2 hours. Keep refrigerated until ready to serve.
