Red Bell Peppers Stuffed with Beans and Rice by Julia Ann SoudersA nutritious meal in a vegetable cup: red bell pepper stuffed with beans and rice. It is a good way to use left over cooked rice. Black Bean Burgers by Guilt Free Cuisine by FergyhunI have tried a lot of veggie burger recipes and some have been disappointing – dry, crumbly and sometimes tasteless. These are the best I have ever made. Full of flavor, they keep their shape during cooking and are packed full of protein. If your grilling days are over for the year, they can be cooked in a skillet on the stovetop… |

Chorizo Sausage and Beans by CarolinaheartstringsNothing says “cold weather classic” to me like one of my childhood favorites, beanies and weenies. At my house that is what we called pork and beans with hot dogs cut up and mixed together and baked in the oven. I loved it! My mother always made a pan of corn bread to go with it and I remember eating it when the weather was cold… |

Reservation Dollar Store Casserole by James BuelEvery dollar store is different, and not all of them may carry these ingredients. If you do not want this casserole to be spicy, omit the jalapenos and use plain diced tomatoes instead of the diced tomatoes with green chilies. |

Ham and bean soup by Bob R.hearty soup, not a woosie puréed thing it's a meal. Not fancy just tasty and adaptable to crock pot but it is not as good. Recipe is easily reduced for smaller quantities but freezes great to provide added meals ( I freeze in one quart bags ) equals (2 bowls). Like most soups mellows for leftovers. Really nice with crunchy bread… |
