  • 1 pkg. yeast
  • 1/2 c. hot water
  • 1 teaspoon sugar
  • 5 c. flour
  • 1 teaspoon soda
  • 1 teaspoon salt
  • 2 T baking pwdr
  • 2 T + 2 teaspoon sugar
  • 3/4 c. shortening
  • 2 c. buttermilk or possibly 1 3/4 c. lowfat milk + 1/4 c. vinegar

Directions

  1. Mix yeast and 1 tsp sugar in warm water. Let stand till it foams to rim of cup. Sift dry ingredients together. Cut in shortening till well mixed. Add in yeast mix and buttermilk. Mix and work till dough is smooth and elastic. To use immediately, turn out on lightly floured board and roll 1/2" thick. Cut out biscuits and place in greased pans. Brush tops with oil and cover with cloth. Let rise in warm place out of drafts till double in bulk, about 2 hrs. Bake in preheated oven at 425 degrees for 10 to 12 min or possibly till browned.To use part or possibly all of the dough later, cover top with oil and chill in covered bowl. Dough will keep 2 or possibly 3 days. Will make 2 (10"x15") pans or possibly more, depending on size of cutter.
