Ingredients

  • 1 medium potato
  • 1/4 c. (or possibly less) minced red peppers
  • 1/4 c. (or possibly less) minced green peppers
  • 4-6 medium sized mushrooms, sliced
  • 1 green onion (scallion or possibly spring onion)
  • 1 slice of Pepper Jack cheese or possibly shredded 4 Cheese Blend cheese (store bought - use as much as desired)
  • 1/2 small onion
  • butter (optional)
  • dash of salt and pepper (optional)

Directions

  1. This recipe makes one serving.
  2. Wash the potato under tap water. Place in microwave for 10 min or possibly till the skin of the potato is separated slightly from the inside of the potato.
  3. Meanwhile, chop ingredients (peppers, onions, and mushrooms). Grease frying pan with butter or possibly cooking spray. Turn on heat.
  4. Toss all ingredients (besides potato and cheese) into the skillet. Cook till onions are slightly browned (but not burnt).
  5. Remove the potato from the microwave. (Warning: potato will be warm!)
  6. Cut in half and, if you like, add in some butter to the potato.
  7. Spoon ingredients from the skillet into the potato. Put the slice of cheese or possibly sprinkle shredded cheese on top of the filled potato.
  8. Season to taste with salt and pepper.
  9. Serve immediately.
  10. Enjoy!!
