Spinach Salad with Avocado and Toasted Almonds

Ingredients

  • 10 ounces fresh spinach (1 bag)
  • 1 cup cucumber, seeded and diced
  • 1 cup avocado diced
  • 1/2 cup orange segments
  • 1/4 cup sliced radishes
  • 1/2 cup sliced almonds, toasted
  • 1/3 cup marinade reserved from Grilled Ginger Sesame Salmon (linked below)

Spinach Salad with Avocado and Toasted Almonds

Time: 15 minutes prep
Servings: 4
 

Directions

  1. Combine spinach, cucumber, avocado, orange segments, and radishes for the salad in a bowl. Toss ingredients well. Pour reserved 1/3 cup marinade from Ginger Sesame Salmon over salad ingredients as a vinaigrette. Garnish salad with almonds.

    Very good - I did enjoy the texture and flavor combinations of this salad. I also tried green leaf lettuce in place of the spinach and it works well too. I have also rated the Ginger Sesame Salmon recipe linked to this.

      We are big salad eaters and love experimenting with all kids of greens and flavors. This ingredients in this spinach salad sound delicious.
