Ingredients

  • 1 cup rice
  • 1 cup black beans (with liquid)
  • 1 cup salsa
  • 1 cup jack cheese, shredded
  • ½ cup corn
  • ½ cup olives, sliced
  • ½ cup green chilies, diced (optional)
  • ½ cup sour cream

Southwestern Rice and Beans

Time: 1 minutes prep, 23 minutes cook
Servings: 4
 

Directions

  1. Mix all but the cheese and sour cream with one cup of water, then heat with 950 watts, covered, for twenty minutes. Stir, then let stand.
  2. Mix the cheese and sour cream, cover, then heat for three minutes at 650 watts.
  3. Pour the cheese sauce over the rice mix and serve.
