Spaghetti Squash with Chick Peas and Sausage Recipe

Directions

  1. Preheat oven 350 degrees:
  2. Cut spaghetti lengthwise and place face down in a baking dish with about 2 inches of water. Bake for about 40-45 minutes.
  3. Bake the sausage in the oven. When the sausage is done, cut into bite size chunks.
  4. In a heated frying pan place the olive oil, garlic, parsley, onions, capers and peppers and let sauté until the onions are clear.
  5. Drain the chick peas and add to the veggies, toss and set aside.
  6. Remove the squash from the water bath and let cool a few minutes. Carefully remove the “noodles” and place in a dish. Toss in the veggies from the frying pan and the sausage. Top with some grated cheese.

    We tried it for lunch yesterday and it was a hit!!! My husband, daughter and a friend of ours who came for lunch all loved it!! Thanks for shareing this. I think it may become a family favorite.

      I am down to that point of really needing a trip to the grocery store (in the big city). Tonight for super I was a little stumped! I have a spaghetti squash, some dry chick peas (which I already soaked and boiled in prep for hummus), lots of spices and basics but really nothing else! So I went searching for a new recipe for my squash.... and I found this! I can't wait to try it!!!
