%3C/p%3E%3Cp%3ELet%20me%20say%20that%20Costco%20Goat%20Cheese%20and%20Mozzarella%20are%20awesome.%20%20And%20for%202%20lbs...and%20just%20under%204%20dollars%20each...that's%20an%20amazing%20deal.%20%20We%20pay%207-10%20dollars%20for%20a%20half%20pound%20at%20our%20local%20grocery%20chain.%3C/p%3E%3Cp%3EI%20digress...%20%20Being%20stuck%20inside,%20and%20wanting%20something%20comforting%20and%20hearty,%20I%20checked%20my%20fridge.%20%20I%20had%20a%202.7%20lb%20Beef%20Round%20Roast%20that%20was%20looking%20pretty%20good.%20%20So%20I%20looked%20up%20recipes%20on%20All%20Recipes%20and%20found%20one%20called%20%22Erica's%20Delicious%20Slow%20Cooker%20Beef%20Roast%22...and%20modified%20from%20there.%3C/p%3E%3Cp%3EAfter%20reading%20some%20of%20the%20reviews,%20I%20made%20more%20than%20a%20few%20modifications...%3C/p%3E%3Cp%3ESlow%20Cooker%20Beef%20Round%20Roast%3C/p%3E%3Cp%3EHere's%20what%20I%20used:%3C/p%3E%3Cp%3EHere's%20what%20I%20did:%3C/p%3E%3Cp%3EAdd%20all%20vegetables%20to%20bottom%20of%20Slow%20Cooker,%20except%20for%20the%20potatoes.%3C/p%3E%3Cp%3EMeanwhile,%20heat%20a%20skillet%20(I%20used%20nonstick)%20with%203-4%20tbsp%20of%20vegetable%20oil,%20and%20set%20to%20medium/high.%20%20Season%20the%20roast%20with%20salt,%20pepper,%20and%20dredge%20lightly%20with%20AP%20Flour.%20%20Add%20roast%20to%20pan,%20and%20sear%20for%2015%20minutes,%20browning%20all%20sides%20of%20the%20roast.%3C/p%3E%3Cp%3EPlace%20roast%20on%20top%20of%20vegetables%20in%20the%20Slow%20Cooker,%20and%20pour%20broth,%20soup%20and%20worchestershire%20sauce%20over%20roast.%20%20Set%20to%20LOW%20for%206-8%20hours.%3C/p%3E%3Cp%3EDuring%20the%20final%201.5%20hours,%20add%20potatoes,%20and%20make%20sure%20they're%20covered%20in%20gravy%20so%20that%20they%20heat%20evenly.%3C/p%3E%3Cp%3EI%20sliced%20the%20roast%20in%201/2%22%20pieces,%20and%20then%20placed%20them%20back%20in%20the%20slow%20cooker%20during%20the%20last%2020-30%20minutes,%20and%20served%20the%20vegetables%20and%20roast%20in%20soup%20bowls.%20%20This%20was%20an%20easy,%20hearty%20meal%20for%20a%20blustery%20day.%3C/p%3E){kind=link}
