Directions

  1. Sauté the onion in hot oil until tender. Add carrots and celery, stir and simmer briefly for 2 minutes.
  2. Add sausage, water, bay leaf and celery. Stir. Bring to a boil and reduce heat, simmer for 10 minutes.
  3. Add the lentils, increase the heat and bring to a boil once again. Reduce heat and cook the soup another 10 minutes.
  4. Before serving, remove celery and bay leaf from the soup.
