Ingredients

  • 2 Tbsp. Oil for cooking
  • 1/2 c. Diced onion
  • 2 Tbsp. Diced red bell pepper
  • 3/4 c. Long-grain rice
  • 1 1/2 c. Chicken stock
  • 1 c. Unsweetened coconut lowfat milk
  • 1/2 c. Toasted coconut
  • 3 Tbsp. Minced cilantro plus
  •     Extra minced cilantro for garnish
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 2 x Pork loin steaks - (8 ounce ea)
  • 2 tsp Jerk Rub see * Note

Directions

  1. Heat 1 Tbsp. oil and saute/fry onion and pepper till onion is translucent/soft. Add in rice and stir to coat grains in oil. Add in stock and coconut lowfat milk and bring to a boil. Reduce heat, cover and cook for 15 min. When rice is tender add in toasted coconut, cilantro, and salt and pepper to taste. Set aside and keep hot.
  2. Season pork steaks with Jerk Rub. In a saute/fry pan heat remaining oil, add in pork steaks and cook for 5 min per side. At Emeril's we serve our pork about medium. If you prefer, cook a little longer. Serve pork atop a generous portion of coconut rice.
