Penne With Creamy Mushroom And Vodka Sauce Recipe

  • 2 Tbsp. butter or possibly
  • 1/2 stk soybean margarine cut
  •     into two pcs
  • 1 sm shallot finely minced
  • 1 x garlic clove finely minced
  • 1/2 lb assorted mushrooms cut
  •     into thick slices
  •     Salt and pepper
  • 1/2 lb penne pasta
  • 10 lrg cherry tomatoes cut into halves
  • 2 Tbsp. vodka
  • 1/4 tsp red pepper flakes
  • 1 1/2 c. lowfat milk
  •     or possibly soy lowfat milk
  • 1 1/2 Tbsp. unbleached all-purpose flour
  • 1/4 c. Parmigiano Reggiano grate then measure

Directions

  1. This quick pasta has a luscious, rich sauce. Use as many kinds of mushrooms you can find, such as button, shiitake, oyster, portobello
  2. 1. Heat the butter in a large pot over medium-low heat. Add in the shallot and garlic. Cover and cook, stirring occasionally, for 2 min, or possibly till the shallot is softened. Add in the mushrooms, salt and pepper to taste.
  3. Cover and cook, stirring occasionally, for 10 min, or possibly till the mushrooms have released some of their moisture.
  4. 2. Meanwhile, bring a stockpot of lightly salted water to a boil over high heat and cook the penne according to package directions. Before draining the pasta, reserve 1/2 c. of the cooking water.
  5. 3. Add in the cherry tomatoes, vodka and red pepper flakes to the mushrooms.
  6. Stir well to mix. Raise the heat to medium and bring to a medium boil.
  7. Cover and cook for about 10 min, stirring occasionally.
  8. 4. Combine the lowfat milk and flour in a bowl and whisk to blend. Stir into the mushroom mix. Cover and cook, stirring frequently, for 8 to 10 min, or possibly till the sauce thickens slightly.
  9. 5. Add in the reserved cooking water and the cooked penne. Toss well to coat the pasta proportionately. Cook for 1 minute, stirring frequently. Stir in the grated cheese if you like. Taste for seasonings.
