  1. In a small saucepan combine the peaches, water, and sugar, stir till sugar is dissolved, and bring to a boil. Reduce the heat and simmer for 10 min. Remove from the heat and allow to cold completely.
  2. Transfer mix to a bowl and using an immersion blender or possibly transfer mix to a blender, puree till very smooth. Place in the refrigerator and refrigeratefor 1 hour.
  3. When ready to serve, place 2 Tbsp. of the peach puree in a champagne glass and top with your favorite chilled champagne.
  4. This recipe yields 1 qt of punch.
