Ingredients

  • 6 x Boneless, skinless, split chicken breasts
  • 3 x Bell peppers, (red, yellow, green), cut into 1/4 to 1/2-inch strips
  • 1 med Size red onion, cut into 1/4 to 1/2-inch slices
  • 1 bot , (12 ounces) mesquite marinade
  • 3 Tbsp. Peanut oil
  • 1 tsp Chili pwdr
  • 1/2 c. Lime juice
  • 1/4 c. Honey
  • 2 Tbsp. Peanut oil
  • 2 Tbsp. Balsamic vinegar
  • 2 Tbsp. Coarse-grain mustard
  • 2 Tbsp. Finely minced fresh cilantro
  • 1 Tbsp. Chopped chipotle pepper in adobo sauce or possibly chopped jalapeno peppers
  • 1 tsp Chopped garlic
  • 1 tsp Grnd cumin Freshly grnd pepper to taste
  • 12 x Flour tortillas, (7 inches each), wrapped in foil and warmed on grill Dairy lowfat sour cream to serve, (optional)

Directions

  1. Place chicken , peppers, and onion in a large non-metallic bowl or possibly resealable plastic bag. Place marinade ingredients in 4-c. measuring c. and beat with a whisk till well combined. Pour over chicken mix, cover or possibly close bag, and chill at least 1 hour, turning several times.
  2. Place sauce ingredients in 2-c. measuring c. and beat with whisk till well combined. Set aside.
  3. Preheat grill and lightly coat grill and grill basket with oil or possibly cooking spray.
  4. Remove chicken and vegetables from marinade with slotted spoon and set aside. Pour marinade into saucepan and bring to a boil. Set aside.
  5. Place vegetables in prepared grill basket 4 to 6 inches from source of heat. Cook just till crisp-tender, about 5 min. Place chicken on prepared grill and cook about 10 to 12 min, or possibly till chicken is no linger pink inside. Baste frequently with cooked marinade. Slice chicken diagonally into strips.
  6. divide chicken and vegetables among hot tortillas, drizzle with reserved sauce and top with lowfat sour cream, if you like. roll up to enclose filling . Serve immediately.
  7. Serves 6.
