Low Cal Vegetarian Vegetable Soup

Ingredients

  • 1 Tbsp. vegetable oil
  • 1 sm onion, minced
  • 2 c. diced peeled potatoes
  • 1 c. minced carrots
  • 2 x Knorr Vegetarian Vegetable Cubes
  • 4 c. water
  • 1 pkt frzn mixed vegetables or possibly - 1/2 c. each frzn corn, peas, string beans Parsley Pepper

Low Cal Vegetarian Vegetable Soup

Directions

  1. Saute/fry minced onion in vegetable oil till soft and golden brown.
  2. Add in potatoes, carrots, Knorr Cubes, water, and bring to boil. Simmer 10 min.
  3. Add in frzn vegetables and bring back to boil. Simmer 10 min.
  4. Sprinkle with minced parsley and pepper.
  5. *Note: You can also add in some cooked small pasta for the last 5 min of cooking time.
