Kale and Leftovers Soup for Secret Recipe Club Recipe
Ingredients
- Kale and Leftovers Soup
- 1 tablespoon olive oil
- 4-6 ounces (about 2 links) Italian sausage, removed from casing
- 2 garlic cloves, minced
- 3-4 new potatoes, peeled and finely diced
- 1 can diced tomatoes
- 1 can cannellini beans, drained and rinsed
- 5 cups homemade chicken stock (or canned, if necessary)
- chili powder, to taste
- cumin, to taste
- kosher salt and freshly ground black pepper, to taste
- 1 cup cooked leftover chicken, diced
- 2 cups chopped fresh kale

%20to%20Zucchini%20Ribbons%20(made%20with%20lemon%20and%20basil%20-%20yum!)%20-%20and%20we%20had%20a%20tough%20time%20choosing.%20But%20in%20the%20end,%20it%20was%20the%20neighbor's%20garden%20that%20made%20the%20decision%20for%20us.%3C/p%3E%3Cp%3EYes,%20James'%20Sunflowers%20and%20More%20came%20through%20yet%20again,%20via%20a%20text%20from%20Barb%20asking%20if%20we%20could%20use%20some%20kale.%20Um,%20yes,%20please!%20It%20is%20a%20super-food,%20after%20all!%20So%20with%20kale%20in%20hand%20and%20in%20mind,%20we%20took%20another%20peek%20at%20Kate's%20Kitchen,%20and%20found%20this%20recipe%20for%20Kale%20and%20Sausage%20Soup.%20And%20we%20made%20it%20on%20one%20of%20those%20perfect%20early-fall%20days%20when%20it%20was%20sunny%20and%20in%20the%20low%2060s.%3C/p%3E%3Cp%3EThe%20recipe%20called%20for%20sausage,%20and%20by%20luck,%20we%20had%20two%20links%20of%20Italian%20sausage%20left%20over%20from%20a%20quick%20sausage,%20peppers%20and%20onions%20dinner%20we%20had%20made%20a%20few%20days%20earlier.%20It%20didn't%20call%20for%20chicken,%20but%20we%20had%20some%20of%20that%20left%20over%20from%20a%20roasted%20chicken%20dinner%20we%20enjoyed%20(when%20we%20used%20the%20carcass%20and%20some%20wilting%20veggies%20to%20make%20a%20homemade%20stock)%20and%20thought,%20why%20not%20throw%20it%20in?%20So%20our%20version%20is%20%22Kale%20and%20Leftovers%20Soup,%22%20and%20we%20loved%20the%20results.%20Here's%20to%20a%20great%20start%20to%20soup%20season!%20Thanks,%20Kate!%3C/p%3E%3Cp%3EHeat%20olive%20oil%20in%20a%20large%20soup%20pot.%20Crumble%20sausage%20and%20cook%20in%20oil%20until%20browned.%20Add%20minced%20garlic%20and%20diced%20pototoes,%20and%20cook%20until%20garlic%20is%20fragrant.%20Add%20tomatoes%20and%20beans,%20and%20cook%20for%202-3%20minutes,%20stirring%20often.%20Add%20stock%20and%20seasonings%20to%20taste.%20Add%20chicken%20and%20cook%20for%20at%20least%2020%20minutes,%20until%20potatoes%20are%20tender%20and%20meat%20is%20warmed%20through.%20Add%20kale%20and%20cook%20an%20additional%208-10%20minutes,%20until%20kale%20is%20tender.%20Enjoy!%3C/p%3E){kind=link}
