Homemade Chorizo Sausage Recipe
Frankly, I have never been able to find good store-bought chorizo, so I made up a recipe, which I use for cheese dips, tortilla dishes, scrambled eggs, and lasagna.
This tastes best after being in the fridge two days, so prepare it in advance.
What you don't use, will freeze.
Ingredients
- 2 lbs. ground pork
- 1 lb. ground beef
- 1/4 cup minced onion
- 6 cloves chopped garlic
- 3/4 cup Tex-Mex Diablo Dust or good chile powder
- 2 tsp. salt
- 3 tbs. red wine vinegar
- 3/4 tsp. dry Mexican oregano
- optional: chopped jalapeno
Directions
- Cook pork, beef, onion, and garlic in a skillet, drain.
- Add other ingredients, stir together and cook 5 minutes.
- Refrigerate two days before using,
