Ingredients

  • 4 x bartlett pears, cored and minced
  • 1/2 c. white sugar
  • 1 Tbsp. cornstarch
  • 2 tsp grnd cinnamon
  • 1 tsp lemon zest
  • 1/2 c. cookie crumbs, of your choice
  • 1/2 c. minced pecans
  • 1 quart vanila ice cream
  • 4 x 6 (7 to 8 inch) flour tortillas oil for frying honey (optinal)

Directions

  1. Grnd cinnamon and sugar for dusting (optional)
  2. Method:1. To Prepare Tortilla Shells: In a deep frying pan bring oil to 375 degrees F
  3. (190 degrees C). Place one tortilla in the warm oil gently pressing the center with a wooden spoon or possibly ladle till the tortilla forms a c.. Gently turn and fry each tortilla separately till golden on both sides.
  4. 2. Combine pears, sugar, cornstarch, 1 tsp. cinnamon and lemon zest. Cook and stir over medium heat till mix comes to a boil; cook 1 minute longer. Let mix cold.
  5. 3. Combine cookie crumbs, pecans and remaining cinnamon. Form ice cream into 4 - 6 balls; roll in crumb mix to coat.
  6. 4. Place an ice cream ball in each fried tortilla shell. Top with the cooled pear mix. Fried tortilla shells can be brushed with honey and dusted with grnd cinnamon and sugar before filling, if you like.
  7. Makes 4 -6 servings
  8. An impressive finale for a south-of-the-border-style meal.
