Green Beans with Basil and Tomato

Green Beans with Basil and Tomato by John Spottiswood

This is an attractive and tasty side dish. The butter, basil and tomato adds a nice flavor boost to the green beans. I've made them with garlic salt and regular kosher salt, both are delicious. If you want to spice it up, add more black pepper or substitute crushed red pepper for the black pepper.

Mexican Rice Pilaf by myra byanka

Generally, Mexican cooks make this rice with fresh tomatoes, but ever the corner-cutter, I use petite diced, drained.

Mexican Style Green Sweet Peas

Mexican Style Green Sweet Peas by Robyn Savoie

This is a delicious way of cooking fresh peas, and makes an excellent accompaniment to any meal. The flavor comes from the vegetables themselves, so use vine tomatoes and organic peas if possible.

Found this recipe on 'Cooking Classy' I tweaked it a tiny bit and it is amazingly close to the rice I love at mexican restaurants. I was actually amazed.

Black Bean and Tomato Quinoa

Black Bean and Tomato Quinoa by Nancy Miyasaki

This is a delicious quinoa recipe that we served with our garlic lime grilled pork chops. This is flavorful enough that you'll want to serve it with a relatively simple grilled dish. It would go wonderfully with grilled fish, chicken, or steak. Or try it with the pork recipe linked below.

Caribbean Peas & Rice

Caribbean Peas & Rice by John Spottiswood

This popular dish throughout the Caribbean is similar to red beans and rice, but made with a few more spices and with crowder, pidgeon, or black-eyed peas instead of red beans. If you can't find any of these, though, red beans make a fine substitute. This is great comfort food that is a nice mellow contrast to spicy-sweet Caribbean…

Squash Blossoms, The Edible Flowers And How To Fix Them

Squash Blossoms, The Edible Flowers And How To Fix Them by kathy gori

This is the time of year when squash blossoms are found in Farmers Markets all around Sonoma. If you've never cooked or eaten squash blossoms, well then you've missed one of the big pleasures of the summer garden. I first had these as a kid when I was still in the "eeewwww we're eating flowers?" phase. They're a big favorite among…

Calamari Sauce or Side via Pressure Cooker

Calamari Sauce or Side via Pressure Cooker by Laura Pazzaglia

You can double this recipe and serve it as a side dish - Italians actually use it as a second course - or make it as written and mix it in with spaghetti, serve it with rice... or surprise your guests by serving it on a little warm rectangle of white polenta - as seafood is served in the Friuli and Veneto regions of Italy.

Fried Yellow Plantains

Fried Yellow Plantains by Yolanda Fernandez

Tostones Amarillos are fried yellow or (ripened) plantains. Yellow plantains are used in Latin cuisine as a side dish. Yellow plantains are often mistaken for bananas. They are not to be eaten raw--they must be cooked. Unlike green plantains, when used for Tostones Amarillos, yellow plantains do not need to be mashed and re-fried.

Sauteed Zucchini with Peppers

Sauteed Zucchini with Peppers by Salad Foodie

A basic and quick zucchini side dish - and interesting variation from zucchini-tomato sautees. This dish can go the route you want it. If I want a south of the border twist, I add 1 small seeded and minced jalapeno pepper along with onions, and season with cumin, chili powder and a sprinkle of Queso fresco. For an Italian flair, I add…
