  • 1 x boneless skinless chicken breast Salt to taste Freshly-grnd black pepper to taste
  • 2 tsp barbeque sauce - (Bull's Eye recommended)
  • 2 slc bacon well crisped
  • 1/4 c. mix of Monterey Jack and sharp Cheddar cheeses Minced fresh tomatoes Minced chives

Directions

  1. Lb. chicken breast till it is somewhat flattened, and season with salt and pepper. Spray Pam in a nonstick skillet, and cook chicken breast till it is done. Transfer to a serving plate. Top chicken breast with barbeque sauce, bacon, and cheese. Broil chicken breast in the oven, or possibly heat the cheese in a microwave. Sprinkle with a small amount of cool minced tomatoes and chives.
