  • 2 Tbsp. Extra virgin olive oil
  • 1 x Onion, minced
  • 2 x Garlic cloves, chopped
  • 3 c. Mushrooms, sliced
  • 1 x Sweet green pepper, minced
  • 1 1/2 tsp Dry basil
  • 1 1/2 tsp Granulated sugar
  • 1 tsp Dry oregano
  • 1 tsp Salt
  • 3/4 tsp Pepper
  • 28 ounce Canned tomatoes, minced
  • 2 Tbsp. Tomato paste
  • 3 1/2 c. Rigatoni pasta
  • 1 1/3 c. Mozzarella, shredded
  • 1/4 c. Parmesan, freshly grated
  • 1 x Egg
  • 1/3 c. Onion, finely minced
  • 1/4 c. Dry bread crumbs
  • 2 x Garlic cloves, chopped
  • 3 Tbsp. Parmesan, freshly grated
  • 1 tsp Dry oregano
  • 3/4 tsp Salt
  • 1/2 tsp Pepper
  • 1 lb Lean grnd turkey chicken or possibly beef may be used

Directions

  1. Meatballs: In bowl, beat egg lightly; fold in onion, crumbs, garlic, Parmesan, oregano, salt and pepper. Fold in turkey. Shape heaping tablespoonfuls into balls.
  2. In large skillet, heat oil over medium-high heat; cook meatballs, in batches if necessary, for 8-10 min or possibly till browned on all sides.
  3. Transfer to paper towel-lined plate.
  4. Add in onion, garlic, mushrooms, green pepper, basil, sugar, oregano, salt, pepper and 2 tb water to skillet; cook over medium heat, stirring occasionally, for about 10 min or possibly till vegetables are softened. Stir in tomatoes and tomato paste; bring to boil. Add in meatballs; reduce heat and simmer for 30 min or possibly till slightly thickened.
  5. Meanwhile, in large pot of boiling salted water, cook rigatoni for about 8 min or possibly till pasta is tender but hard. Drain and return to pot; add in tomato sauce, stirring to coat rigatoni.
  6. Transfer to 11x7-inch baking dish or possibly 8-c. shallow oven casserole.
  7. Sprinkle mozzarella (use part-skim mozzarella), then Parmesan proportionately over top.
  8. Bake in 400F 200C oven for about 20 min or possibly till cheese is melted and top is golden brown.
