Ingredients
- 1/8 c. extra virgin olive oil
- 1/4 c. whole grain mustard
- 1/2 c. sherry wine vinegar
- 1/2 c. basil leaves, minced
- 12 ounce red bell pepper, diced
- 12 ounce green bell pepper, diced
- 1 lb white mushrooms
- 1 x avocado, whole
- 6 x butterhead lettuce leaves
- 12 x italian bread slices

Avacado And Mushroom Salad
Servings: 6
Directions
- In a large bowl, mix oil, mustard, vinegar, basil and bell peppers. Set aside.
- Wash mushrooms and slice. Add in to the dressing mix and marinate for 10 min. Serve each salad portion on a leaf of lettuce. Fan sliced avocado on top and serve with two slices of grilled Italian bread.
