Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup white sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 1 cup mashed over-ripe bananas
  • 1/2 cup vegetable oil
  • 1/2 teaspoon banana extract
  • 1/2 teaspoon vanilla extract
  • 1 cup shredded zucchini
  • 1 cup chopped pecans

Directions

1. Preheat oven to 325 degrees Farenheit.
2. In large bowl, combine flour, sugar, cinnamon, baking powder, baking soda, and salt.
3. In a separate bowl, add the egg, bananas, oil, and extracts.
4. Stir into dry ingredients just until moistened. Fold in zucchini and walnuts.
5. Place batter in three 5 3/4 x 3 x 2-inch mini loaf pans coated with non-stick cooking spray.
6. Bake 40 minutes or until a toothpick inserted in the center comes out clean.
7. Cool for 10 minutes before removing from pans to wire racks to continue to cool.
