Yellow Squash Casserole #2

I have a couple of friends who grow beautiful, delicious squash, and since they give me a lot of it during the summer, I have to figure out new things to make with it.

Ingredients

  • 3 lbs. yellow squash
  • 1 tbs. oil
  • 1/2 cup chopped onion
  • 2 scallions, chopped
  • 1/2 tbs. dry parsley
  • 1/2 cup cheddar or Jack cheese
  • 3 oz. package cream cheese, room temp
  • 1/2 tbs. sugar
  • 1/2 cup milk
  • 1/2 cup sour cream
  • 2 beaten eggs
  • 1/2 cup crushed saltines
  • 1/8 tsp. dry oregano and garlic powder
  • pinch dry thyme
  • salt and pepper to taste
  • topping: buttered crushed saltines or cheese and paprika

Directions

  1. Heat oven to 350 F.
  2. Rinse and coarsely chop or slice squash.
  3. Cook in simmering, salted water until soft, drain, mash a bit.
  4. Saute onion until golden brown in oil.
  5. Add cream cheese and stir until melted.
  6. Mix squash and all other ingredients in a 2 qt. baking dish.
  7. Cover and bake 30 minutes.
  8. Remove cover and put of topping of choice. Bake another 5 minutes.
