Winter Kale and Apple salad with Freekeh

Ingredients

  • 12 oz chopped Kale
  • 1 Carrot, shredded
  • 1 Apple, chopped
  • 1/2 cup cooked Freekeh or Quinoa
  • 1/4 cup dried cranberries
  • Juice of 1 lemon
  • 1/4 cup Balsamic vinegar
  • 1 tbs. Molasses
  • 1 tbs. Grapeseed oil

Directions

  1. In a large bowl add kale, carrot, apple, steamed freekeh and cranberries.
  2. In a small bowl add lemon juice, balsamic vinegar, molasses and grapeseed oil, then whisk together with a wire whisk
  3. Pour mixture over salad and toss.
