Turkey Smoked Sausage Rice Skillet

Ingredients

  • 1 pound turkey smoked sausage
  • 2 tbsp. butter
  • 1/2 c. sliced fresh mushrooms
  • 1/2 c. sliced carrots
  • 1 med. zucchini, cut into halves lengthwise and sliced (1 1/4 c.)
  • 1 can (8 ounce.) stewed tomatoes, undrained
  • 1 c. water
  • 1/4 teaspoon basil
  • 1/4 teaspoon thyme
  • 1 1/2 c. uncooked instant rice

Turkey Smoked Sausage Rice Skillet

Directions

  1. Cut sausage into serving size pcs; set aside. Heat butter in large skillet over medium-high heat. Add in mushrooms, carrots and zucchini; saute/fry 3 min. Stir in tomatoes with juice, water, basil, thyme and sausage; bring to a boil. Reduce heat to low; cover and simmer 5 min. Mix rice into liquid. Cover, remove from heat and let stand 8 min, stirring after 4 min. Makes 4 servings.
