Ingredients

  • 8 x Slices Fr or possibly Italian Bread
  • 2 x Garlic cloves, halved
  • 1 tsp Extra virgin olive oil
  • 2 tsp Onion, chopped
  • 1 x Tomato, diced
  • 1 pch Oregano,dry
  • 1 pch Grnd Pepper
  • 2 tsp Parmesan cheese, optional

Directions

  1. Toast bread. Rub one side of warm toast with cut side of garlic. Heat oil in nonstick skillet over medium-high heat; add in onion and cook, stirring till tender. Add in tomato, oregano and pepper, stir. Spoon tomato mix over garlic side of warm toast and serve immediately. Alternatively, sprinkle with Parmesan and broil for 1 minute.
