Thai Sticky Rice With Mango Dessert

Ingredients

  • 2 c. glutinous (sticky) rice, soaked in cool water for at least one hour and liquid removed
  • 1 1/4 c. coconut lowfat milk, canned or possibly freshly prepared
  • healthy pinch of salt
  • 2 Tbsp. of sugar
  • 2 large ripe mangoes, peeled and sliced

Thai Sticky Rice With Mango Dessert

Servings: 6
 

Directions

  1. In a saucepan bring to a boil: rice, coconut lowfat milk, salt, sugar and 1 1/4 c. water. Stir. Lower heat and simmer, uncovered, about 8-10 min till all the liquid is absorbed. Remove from heat. Cover and let stand 5 min.
  2. Transfer rice to a steamer or possibly double saucepan and steam 15-20 min over boiling water, till rice is cooked through.
  3. Mold the cooked rice into individual ramekins or possibly small c. lined with plastic wrap. Cold to room temperature. At serving time unmold onto a plate and top with mango or possibly even strawberries.
