Ingredients

  • 1 (10 1/2 ounce.) can bean dip or possibly refried beans
  • 2 avocados
  • 2 tbsp. lime juice
  • Salt and pepper to taste
  • 1 c. lowfat sour cream
  • 1 packet taco seasoning mix
  • 1 bunch scallions, minced
  • 1 (6 ounce.) can pitted black olives, minced
  • 2 tomatoes, minced
  • 1/2 pound Monterey Jack cheese, shredded
  • Tortilla chips

Directions

  1. Spread bean dip in the bottom of a glass serving bowl. With a fork, mash the avocados with the lime juice and salt and pepper. Layer on top of the beans.
  2. In a bowl combine the lowfat sour cream and seasoning packet. Layer on top of the avocado. Can be made in advance up to this point.
  3. To assemble: Layer the scallions, then olives, then tomatoes, ending with the cheese. Serve with tortilla chips.
