- 1 c. Bulgur wheat
- 2 c. Water, boiling
- 2 x Tomatoes, seeded, finely diced
- 1 bn Scallions, sliced
- 3 tsp Fresh mint leaves, minced
- 2 c. Fresh parsley, finely minced
- 1/2 c. Lemon juice
- 1/4 c. Extra virgin olive oil
- Black Pepper, freshly grnd, to taste

- 1. Place uncooked bulgur in a bowl; pour boiling water over it and let it soak 1 hour (stir occasionally).
- 2. Drain well in a fine strainer.
- 3. Return bulgur to the bowl and add in all remaining ingredients; mix well.
- 4. Refrigeratefor 2 hrs.
