Tabouli With Fresh Mint

Ingredients

  • 1 c. Bulgur wheat
  • 2 c. Water, boiling
  • 2 x Tomatoes, seeded, finely diced
  • 1 bn Scallions, sliced
  • 3 tsp Fresh mint leaves, minced
  • 2 c. Fresh parsley, finely minced
  • 1/2 c. Lemon juice
  • 1/4 c. Extra virgin olive oil
  •     Black Pepper, freshly grnd, to taste

  4. Servings: 8 as a side dish
  5. 1. Place uncooked bulgur in a bowl; pour boiling water over it and let it soak 1 hour (stir occasionally).
  6. 2. Drain well in a fine strainer.
  7. 3. Return bulgur to the bowl and add in all remaining ingredients; mix well.
  8. 4. Refrigeratefor 2 hrs.
