Sunshine C Salad

Fresh and colorful, this slaw is chock-full of vitamin C, virtually no calories and no fat to worry about. It is a mayo free and picnic friendly slaw. I love to make a big box of it an keep it in the fridge to snack on for as long as it lasts. I like to add a dash of red pepper flakes to zing it up but for those that prefer no heat, just leave it out.

Ingredients

  • 1/2 head of green cabbage, sliced thin
  • 1 green bell pepper, julienned
  • 1 red bell pepper, julienned
  • 2 stalks celery, thin sliced
  • 1 granny smith apple, julienned
  • 1/2 c chopped italian/flat leaf parsley
  • 1 orange, 'supreme' and chop the segments, add any juices squeezed from pulp into container
  • juice of 2 lemons
  • 1 t honey
  • 1T mild vinegar (rice or white wine)
  • 1/8 t red pepper flakes

Directions

  1. In a large plastic container, combine all ingredients. Place lid on container and shake.
