Summer Pineapple Cake

Ingredients

  • 2 ½ cups flour
  • 1 ½ cups sugar
  • 4 tablespoons butter
  • 2 eggs
  • 1 cup milk
  • ½ cup brown sugar
  • ½ cup sour cream
  • 1 tsp. vanilla
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • ½ tsp. salt
  • For the Pineapples
  • Ingredients:
  • 1 ½ cups fresh pineapple – cut up
  • ½ cup brown sugar

Summer Pineapple Cake

Time: 10 minutes prep, 45 minutes cook
Servings: 8
 

Directions

  1. Preheat Oven 350 degrees:
  2. In a mix-master combine the butter and white sugar and mix until smooth.
  3. In a separate bowl combine the milk, eggs, vanilla, sour cream and ½ cup of brown sugar and beat with a fork. Add this to the mix- master and mix.
  4. In a separate bowl combine the flour, baking powder, baking soda and salt. Slowly add this to the mix-master while on low.
  5. In a small bowl combine the pineapple and ½ cup of brown sugar and stir.
  6. Prepare a bunt pan with butter; (don’t forget to butter the middle piece of the pan) and place the prepared pineapple along the bottom.
  7. Pour the batter into the pan.
  8. Bake for 40-45 minutes or until the toothpick test comes out clean.
