Ingredients
- 2 ½ cups flour
- 1 ½ cups sugar
- 4 tablespoons butter
- 2 eggs
- 1 cup milk
- ½ cup brown sugar
- ½ cup sour cream
- 1 tsp. vanilla
- 1 tsp. baking soda
- 1 tsp. baking powder
- ½ tsp. salt
- For the Pineapples
- Ingredients:
- 1 ½ cups fresh pineapple – cut up
- ½ cup brown sugar

Summer Pineapple Cake
Time: 10 minutes prep, 45 minutes cook

Directions
- Preheat Oven 350 degrees:
- In a mix-master combine the butter and white sugar and mix until smooth.
- In a separate bowl combine the milk, eggs, vanilla, sour cream and ½ cup of brown sugar and beat with a fork. Add this to the mix- master and mix.
- In a separate bowl combine the flour, baking powder, baking soda and salt. Slowly add this to the mix-master while on low.
- In a small bowl combine the pineapple and ½ cup of brown sugar and stir.
- Prepare a bunt pan with butter; (don’t forget to butter the middle piece of the pan) and place the prepared pineapple along the bottom.
- Pour the batter into the pan.
- Bake for 40-45 minutes or until the toothpick test comes out clean.
