Strawberry Pie
Time: 30 minutes prep, 10 minutes cook
Servings: 8
Directions
- For crust:
- Mix ingredients above until oily. Using hands, press into pie pan. Bake at 400 degrees for 10 minutes.
- For Filling:
- Boil the sugar, water, cornstarch & corn syrup until thick and clear. Remove from heat and add jello mix. Stir until dissolved. (Here you can add a few drops of red food coloring if you like - I don't). Add hulled strawberries and stir.
- When crust has cooled, add berries and chill pie until it sets. At least 2 hours before serving.
- Really doesn't need anything else with it but some fresh whipped cream is good.

Summary
I've made this pie every summer since I was 10. The crust is a little salty which is a nice accompaniment to the sweet strawberries. Everyone loves it. Fresh, ripe strawberries are a must.
