Ingredients
- 125g soba noodles
- Topping: carrot, cut into strips 6cm by 1cm
- broccoli florets
- green peppers, cut into strips
- fresh coriander
- Dressing: 1 tablespoon rice vinegar
- 1 tablespoon light soy sauce
- 2 tablespoons mirin
- 1 tablespoon tahini
- ½ tablespoon sake
- 1 tablespoon sesame
- 4 teaspoons chili oil

Spicy Soba Noodles
Time: 10 minutes prep, 10 minutes cook
Servings: 4
Directions
- Steam the vegetables and leave them to cool, or plunge them into cold water.
- Whisk the dressing ingredients together in a blender or food processor.
- Cook and cool the broken noodles.
- Mix the cooked vegetables with the noodles in a bowl, pour over the dressing and toss the salad.
