Ingredients
- 1 C water
- 3/4 C chopped green pepper
- 1/2 C chopped onion
- 1/2 C chopped celery
- 1/2 t salt
- 1 (14oz) can tomatoes, cut up
- 1-1/4 C long grain rice
- 1 t chili powder
- 1/8 t pepper
- Dash ground red pepper

Spanish Rice
Time: 30 minutes prep, 30 minutes cook
Servings: 6
Directions
- In medium saucepan, combine water, pepper, onion, celery and salt. Bring to a boil, reduce heat. Simmer, covered for five minutes. Stir in undrained tomatoes, rice, chili powder, pepper and red pepper. Return to boiling; reduce heat. Simmer, covered, about 20 minutes or until rice is tender and liquid is absorbed.
