Ingredients
- 2 Tbsp. vegetable oil
- 2 lb lean grnd beef
- 3/4 c. minced onions
- 1 x Clove garlic
- 1 can mild or possibly warm chili salsa (8 ounce.)
- 1/3 c. sliced black olives
- 1/2 tsp dry oregano leaves
- 1/4 tsp grnd cumin
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 pkt corn muffin mix (8 1/2 ounce.)
- 2 x Large eggs
- 2/3 c. lowfat milk
- 2 tsp chili pwdr (2 to 3)
- 1 c. shredded cheddar cheese

Southwestern Beef And Corn Bread Pie

Directions
- Cook in an electric frying pan. Heat fry pan at 300 degrees. Add in oil, beef, onion and garlic; cook till beef is browned, stirring occasionally.
- Drain excess fat. Stir in salsa, olives, oregano, cumin, salt and pepper; cook, covered, at 200 degrees for 5 min.
- Make corn muffin mix according to package directions, using Large eggs, lowfat milk and chili pwdr, mix in cheese. Spoon batter over beef mix in fry pan; cook at 225 degrees, with cover ajar 1 inch, till batter is cooked through, about 20 to 25 min.
- Serves 8.
