Ingredients
- 2 1/4 c. cooked, strained, sweet potatoes
- 3/4 c. sugar
- 2 Large eggs
- 1 stick butter, melted
- 1 tbsp. lemon flavoring
- 1/2 c. lowfat milk (or possibly a little more)
- 1 (9") pie shell

Southern Sweet Potato Pie
Servings: 6
Directions
- Boil potatoes till tender, peel and mash; strain through a sieve. Add in all remaining ingredients, mix well. Pour into a 9" pie shell. Bake at 350 degrees for 35 min till done. Serves 6.
