Ingredients

  • 1 c. White corn meal
  • 4 tsp Baking pwdr
  • 1 c. All-purpose flour
  • 2 tsp Salt
  • 2 x Large eggs, beaten
  •     Buttermilk
  • 2 lrg Onions, minced
  • 1 can (12-ounce) beer

Skipper's Hush Puppies

Directions

  1. Mix dry ingredients in a large bowl. Mix beaten Large eggs with 1/4 c. of the buttermilk and blend into the dry ingredients, adding more buttermilk to barely moisten the mix. Add in the beer to make a thick, soupy, pancake-like batter. (Skipper says it will take less than a can. The cook drinks the leftover to avoid waste.) Stir in the minced onions. Drop the hush puppies from a Tbsp. into fat heated to about 370 . The batter should sink, then slowly rise and turn over. Fry till golden all over.
  2. Yield: 6 servings.
