Ingredients

  • 6 tbsp. butter
  • 1/2 c. minced celery
  • 1/2 c. minced onion
  • 1/2 c. diced green pepper
  • 1 garlic clove, chopped
  • 6 tbsp. flour
  • 1 quart. chicken broth
  • 1 can (1 lb.) tomatoes
  • 1/2 teaspoon salt
  • 1/4 teaspoon warm pepper sauce
  • 1 bay leaf
  • 1/2 teaspoon dry marjoram
  • 2 tbsp. minced parsley
  • 1/2 teaspoon gumbo file
  • 1 pound crabmeat flaked
  • 1 pound shrimp, shelled and cleaned
  • 1 can (1 lb.) cut okra, liquid removed
  • 3 c. warm cooked rice

Directions

  1. Heat butter in deep kettle. Add in celery, onion, pepper and garlic. Cook till tender. Blend in flour; gradually add in chicken broth. Add in tomatoes, salt, warm pepper sauce, bay leaf, marjoram and parsley.
  2. Bring to a boil, cover and simmer 30 min. Add in gumbo file, crab meat, shrimp and okra. Simmer 10 min. Divide rice into 6 soup bowls. Spoon gumbo over top.
