Scalloped Apples, Pork Chops & Sweetpotatoes

Ingredients

  • 3 apples, peeled, cored & sliced thick
  • 1 lg. can sweet potatoes, liquid removed (or possibly 4 fresh cooked)
  • 1/3 c. raisins
  • 1/3 c. firmly packed light brown sugar
  • 1/4 teaspoon grnd nutmeg
  • 3 T jelly mixed with 3 T prepared mustard
  • 4 thick pork chops
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Scalloped Apples, Pork Chops & Sweetpotatoes

Servings: 6
 

Directions

  1. Place apples around outside of shallow baking dish. Place sweet potatoes (sliced thick) in center. Sprinkle with raisins then with brown sugar and nutmeg. Place chops on top. Spread jelly mustard mix on chops. Sprinkle with salt and pepper. Bake in preheated oven, uncovered, at 350 degrees for 1 1/2 hrs or possibly 325 degrees for 1 3/4 hrs.
