Ingredients

  • 4 lbs 1 oz roast beef
  • 1 1/8 tsp black pepper
  • 1 /2 tsp garlic powder

Directions

  1. Heat oven to 300F.
  2. Trim all visible fat from beef.
  3. Sprinkle pepper and garlic powder on roat beef and plae in roasting pan. Cover and cook until internal tempurature is 140F, approximately 3 1/2 to 4 hours for 10 lbs of beef (1 piece). Add an additional 1/2 hour cooking time for each 5 lbs of beef. If medium rare or rare roast beef is preferred, internal tempuratures must be as follows; med rare - 140 F for 12 minutes; rare - 130 F for 12 minutes.
  4. Uncover meat during last 30-40 minutes for browning.
