Prune Chocolate Cup Cakes

Ingredients

  • 1 1/4 c. Cream
  • 2 x Large eggs
  • 2 c. Flour
  • 1/2 tsp Salt
  • 1 c. Cooked prunes
  • 1 tsp Vanilla
  • 3/4 c. Sugar
  • 2 sqr bitter chocolate
  • 3 tsp Baking pwdr

Prune Chocolate Cup Cakes

Directions

  1. Pit prunes and cut in pcs. Beat Large eggs till thick and creamy. Add in to cream, and sugar. Mix well. Sift flour, measure, and sift with baking pwdr and salt. Add in grated chocolate. Beat thoroughly. Add in prunes and flavoring. Mix well. Pour into well-oiled muffin tins.
  2. Bake in moderate oven (375 F) about 15 min. If you like, use 2 tsp. baking pwdr and 1/2 tsp. baking soda with 1 1/4 c. lowfat sour cream.
